This recipe is for an 8-inch cake.
Ingredients:
200g fresh durian pulp
50g butter
5 eggs, separated into yolks and whites
25g + 50g sugar
25g cornstarch
400g cream cheese
200g milk
Instructions:
1. Stir together 20g butter and 200g durian pulp.
2. Separate the 5 egg whites and yolks.
3. Pour 200g of milk into a milk pan and add 30g of butter. Simmer on very low heat.
4. In the meantime, add 25g of sugar to the egg yolks, then add 25g of cornstarch. Mix together.
5. When the milk starts to simmer, add the cream cheese. When the cheese melts into the milk, turn off the heat.
6. Introduce the egg yolk mixture, then add the durian pulp.
7. For the last touch, fold the beaten egg whites into the paste. Gradually add egg white to ensure even mixing.
8. Prepare a water bath for baking the cheesecake. Place tin foil under the live-bottom cake mold.
9. Bake the cake at 150℃ (300℉) for 40 minutes.
