How to Make Flavorful Crispy Tofu (香煎豆腐)

Tofu is a highly nutritious food, providing high protein. It is a rich source of essential minerals like calcium, manganese, selenium, and phosphorus, while also containing iron, zinc, magnesium, and vitamins such as niacin, riboflavin, and B6. Additionally, tofu is low in sodium but high in heart-healthy omega-3 fatty acids.
The process of preparing this tofu is quite simple. We don't need to press the tofu to remove excess moisture, just coat it with egg mixture and cornstarch, the cornstarch will seal in the moisture, and the egg mixture will make our tofu crispy exterior with tender interior.
The traditional Chinese crispy tofu recipe incorporates soy and oyster sauces, but feel free to customize it with alternatives like abalone sauce or simply salt. For a spicy kick, add chili sauce, and if cumin isn't to your liking, it can be omitted.
Tips, maintain a moderate cooking heat; too low, the tofu won't form a crispy crust as the moisture will evaporate. Conversely, if the heat is too high, the tofu can burn quickly.
Ingredients:
500g firm tofu
Cornstarch
Egg mixture (2 eggs)
Cooking oil
1/2 chili, sliced
Chopped spring onion
Chopped coriander
2 tbsp soy sauce
1 tsp sugar
1 tsp cumin
1 cup water (tofu water can be used)
Instructions:
1. Gently slice the firm tofu into one-third-inch cubes.
2. Coat the tofu cubes with cornstarch and egg mixture.
3. Prepare the sauce by mixing chili, spring onion, coriander, soy sauce, sugar, cumin, cornstarch, and water.
4. Heat a non-stick pan with cooking oil and carefully place the coated tofu cubes into the pan. Allow them to cook without touching for 2-3 minutes until one side turns golden brown.
5. Flip the cubes and reduce the heat to low to prevent burning. Cook until all sides are golden brown.
6. Remove tofu, clean the pan and add the tofu back, pour in the prepared sauce.
7. Cover and cook until the sauce caramelizes and is fully absorbed by the tofu cubes.
