Today we’re transforming simple ingredients into something crispy, tender, and packed with flavor: juicy chicken simmered and shredded, mixed with cream cheese and herbs, shaped into perfect little balls, and double-coated in crunchy panko.

🎬 Today’s Recipe:
Crispy Chicken Croquette Balls with Tangy Dipping Sauce
These beauties are easy to prepare, freezer-friendly, and incredibly satisfying — served with a simple homemade dipping sauce that brings everything together.
🛒 INGREDIENTS:
📌 For the Chicken Balls:
• 500g chicken (cubed)
• 350g cream cheese
• 1 onion
• 2 garlic cloves
• 1 bunch fresh parsley
• 200ml water
• 2 tbsp tomato sauce
• 1 tsp paprika
• 2 eggs
• 200g panko breadcrumbs
• Salt & pepper to taste
• Olive oil for frying
📌 For the Dipping Sauce:
• 3 tbsp mayonnaise
• 1 tbsp ketchup
• 1 tbsp mustard
• 1 tsp paprika
• 1 tsp salt
🔥 PREPARATION STEPS:
1️⃣ Cook and season the chicken:
Sauté garlic and onion in olive oil. Add chicken, water, tomato sauce, paprika, salt, and pepper. Cover and simmer for 30 minutes.
2️⃣ Shred and mix:
Shred the chicken directly in the pan while hot. Transfer to a bowl and mix with cream cheese and chopped parsley.
3️⃣ Chill:
Let the chicken mixture cool completely before shaping.
4️⃣ Shape the balls:
Rub olive oil on your hands for easy shaping and use an ice cream scoop for uniform balls.
5️⃣ Freeze:
Freeze for 20 minutes to firm up before breading.
6️⃣ Bread the balls:
Dip each ball into beaten eggs with a pinch of salt, coat in panko, dip again in eggs, and finish with another layer of panko — this double coating keeps the filling inside during frying.
7️⃣ Fry:
Heat enough oil to cover half of each ball. Fry until golden and crisp.
8️⃣ Make the dipping sauce:
Mix mayonnaise, ketchup, mustard, paprika, and salt until smooth and creamy.
9️⃣ Serve:
Serve hot, crispy chicken balls with the delicious dipping sauce on the side — pure joy in every bite!

🛒 INGREDIENTS:
📌Cauliflower:
1 head of cauliflower
2 eggs
1/2 cup of flour
1/2 cup of breadcrumbs
80 g grated Parmesan cheese
📌Seasonings:
1 ½ teaspoons smoked paprika
1 teaspoon oregano
Pepper to taste
Salt to taste
📌Homemade Mayo:
1 generous tablespoon of mustard
1 egg yolk
100 ml vegetable oil
Salt and black pepper to taste
Parsley (optional)
🔥 PREPARATION:
📌Cauliflower:
1. Preheat the oven to 200°C (400°F)
2. Cut the cauliflower into small florets
3. Boil in salted water for 5 minutes. Drain and set aside
4. Prepare 3 bowls: flour / beaten eggs / Parmesan + seasonings
5. Coat each floret in flour, then egg, then the Parmesan mix
6. Place on a baking tray with parchment paper and bake for 25 minutes or until golden
📌Homemade Mayo:
1. Place the mustard in a bowl
2. Add the egg yolk, salt and pepper
3. Whisk well and slowly drizzle in the oil while whisking constantly
4. The more you whisk, the firmer it gets 😉
