🛒 INGREDIENTS:
📌 Vegetables & Sauce
• 1 head of broccoli
• Salt for boiling
• 1 garlic clove, finely chopped
• Olive oil & 100 g butter
• 300 g mushrooms, sliced
• 2 tbsp soy sauce
• Salt & black pepper to taste
• ½ tsp brown sugar
• 1 tsp cornstarch (diluted)
• 1 tsp vinegar
• 1 cup vegetable broth
• Chili powder to taste
📌 Pasta
• 250 g spaghetti
• 2 ladles of pasta cooking water
• Salt to taste

1. Boil the broccoli: Cut into florets and boil in salted water for 3 minutes. Drain and set aside.
2. Sauté the base: In a large pan, heat olive oil and 100 g butter. Add finely chopped garlic and sauté until golden and fragrant.
3. Mushrooms: Add mushrooms and cook until they brown and release their moisture.
4. Build the sauce: Stir in soy sauce, salt, pepper, brown sugar, vinegar, and diluted cornstarch. Pour in the vegetable broth and return the broccoli to the pan.

• 80 ml heavy cream
• ½ tbsp smoked paprika
• Salt & black pepper to taste
• 100 ml reserved pasta water
• 1 tbsp balsamic vinegar
• 150g grated Parmesan cheese
