🍲 Tender Meatballs & Golden Potatoes in Tomato Sauce – A One-Pot Cozy Classic
This dish tastes like home: juicy meatballs, golden potatoes, and a rich, slow-simmered tomato sauce with leeks and love. Simple ingredients, deep flavor — all made in one single pan.
🛒 INGREDIENTS
📌 For the Meatballs:
• 500 g ground beef
• 1 egg
• ½ cup panko breadcrumbs
• Salt & black pepper to taste
• Olive oil (for cooking)
📌 For the Potatoes:
• 4 medium potatoes
• 1 tsp dried oregano
• 1 tsp sweet paprika
• Salt & black pepper to taste
• Olive oil
📌 For the Sauce:
• 1 onion, chopped
• 2 garlic cloves, minced
• 1 medium carrot, finely chopped
• 3 ripe tomatoes, sliced
• 450 ml tomato sauce
• Leek, thinly sliced (to taste)
• Oregano to taste
• Olive oil
🔥 PREPARATION STEPS
1. Shape the meatballs
In a bowl, combine ground beef, egg, panko, salt, and pepper. Mix well and form into small meatballs.
2. Sear the meatballs
In a large pan, heat olive oil and sear the meatballs until golden brown on all sides. Remove and set aside — they’ll finish cooking in the sauce later.
3. Prepare the potatoes
Peel and cut the potatoes into medium cubes. Toss with olive oil, oregano, paprika, salt, and pepper.
4. Sauté the potatoes
In the same pan, fry the potatoes until golden on the outside. Remove and set aside.
5. Start the sauce
In the same pan, sauté chopped onion in olive oil until soft. Add garlic and cook until fragrant.
6. Add the carrots
Stir in chopped carrots and cook for 2–3 minutes.
7. Add the tomatoes
Slice and add the ripe tomatoes to the pan. Stir gently to release their juices.
8. Build the sauce
Pour in the tomato sauce. Return the golden potatoes to the pan, season with oregano, and stir well.
9. Leek time!
Add the thinly sliced leek and mix — it gives the sauce an extra layer of sweetness and depth.
10. Bring back the meatballs
Place the meatballs into the sauce, cover the pan, and let everything simmer together for 30 minutes.
11. Final touch
Remove the lid and simmer for another 5 minutes to reduce slightly and concentrate the flavors.

🛒 INGREDIENTS:
📌For the meatballs:
• 500 g (1.1 lb) chicken pieces
• 150 g (5.3 oz) fresh ricotta
• 40 g (1.4 oz) sun-dried tomatoes
• ½ onion, finely chopped
• 1 garlic clove, minced
• ¼ bunch of fresh basil
• 50 g (1.8 oz) grated parmesan
• 30 g (1 oz) breadcrumbs
• 1 egg, lightly beaten
• Salt & black pepper to taste
📌For the sauce:
• 50 g (3.5 tbsp) butter
• 1 garlic clove, minced
• 250 ml (1 cup) heavy cream
• 200 ml (¾ cup + 2 tbsp) milk
• ½ tsp cornstarch (diluted in a bit of milk)
• 40 g (1.4 oz) sun-dried tomatoes
• Salt & black pepper to taste
• 50 g (1.8 oz) grated parmesan
• Fresh basil to garnish
🔥 PREPARATION STEPS:
Preheat the oven to 200°C / 390°F.
📌Meatballs:
1. Preheat the oven to 200°C / 390°F.
2. Blend chicken until finely ground
3. Mix with ricotta, onion, garlic, sun-dried tomatoes, parmesan, breadcrumbs, egg, salt & pepper
4. Shape into meatballs and place on baking tray
5. Bake for 25 minutes
📌Creamy Sauce:
1. In a skillet, melt butter and sauté garlic
2. Add cream + milk and bring to a light boil
3. Stir in diluted cornstarch and let it thicken slightly
4. Add sun-dried tomatoes and parmesan, simmer gently
5. Add baked meatballs and coat in the sauce
6. Garnish with fresh basil and serve warm.
