Turšija is a staple in Macedonia that was traditionally consumed over the winter months, but nowadays eaten year round. Originally made in the fall as a way to preserve summer vegetables before the advent of refrigeration, Turšija was naturally fermented using only water, salt, and maybe a few herbs.
Enjoy Turšija as a starter to any meal, or simply eaten with bread, cheese, olives and maybe some dried cured meats. It's best served with some Rakija of course! Enjoy!

YOU NEED (to make 2 LARGE jars):
Vegetables of choice are:
Cabbage, Carrots, Green Tomatoes, Peppers (sweet bell and hot), Cauliflower, Small Cucumbers. Other additions may include Cherry Tomatoes, Okra and Grilled Eggplant.
For the Brine:
10 Cups Water
8-9 TBSP Kosher Salt
To Add to the Jars:
4 LARGE Sprigs of Dill (2 in each jar) (Preferably with the flowering tops, if not also add 1 heaping tsp. of dill seeds into each jar)
12 Whole Cloves of Garlic (6 in each jar)
