📌 RECIPE CARD
BULDAK CHICKEN SANDWICH
Ingredients
Chicken breast 500 gm
Marinate with
Milk 1 cup
Vinegar 2 tbsp
Egg 1
Ginger powder ½ tsp
Siracha sauce 2 tbsp
Ciabatta bread
Ingredients for Coating
Flour 1 ½ cup
Ginger garlic powder 1 tsp each
Salt ½ tsp
Corn flour 4 tsp
Ingredients for Buldak Sauce
Honey ¼ cup
Soy sauce ¼ cup
Gochujang 2 tsp
Grated ginger 1 tsp
Vinegar 1 tsp
Oil 2 tsp
Sesame seeds 1 tsp
Water ½ cup
Ketchup 2 tbsp
METHOD FOR SAUCE
Mix all together and cook till thick, lastly add sesame seeds.
Ingredients for Coleslaw
White cabbage shredded ½ cup
Shredded carrots ½ cup
Iceberg shredded 1 cup
Purple cabbage shredded ½ cup
Mayonnaise ½ cup
Sar cream ½ cup
Mustard paste ½ tsp
Sugar 1 tbsp
Vinegar 1 tbsp
Salt & pepper ½ tsp each
METHOD
Marinate chicken with butter milk, egg, ginger garlic and siracha sauce, coat in the dry flour mixture and deep fry till chicken crisp and golden, add to the below sauce and sprinkle sesame seeds.
TO ASSEMBLE
Ciabatta bread
Coleslaw
Fried chicken
Fix with toothpick
Serve with Fries
PENANG CURRY
Ingredients for Penang Curry Powder
Cinnamon stick 1
Star anis 2
Green cardamoms 10
Cloves 10
Coriander seeds 2 tbsp
Black pepper 1 tbsp
Cumin seeds 2 tbsp
Dry roast all and grind into a fine powder
Lemon grass 3 stems chopped or dry lemon grass 3 tsp
Ginger 2 inch chopped
Lemon zest 2 tsp
Kafil leaves finely chopped 8
Thai red chili pastes 2 tbsp
Button red chilies 10 soaked
Peanut butter 3 tbsp
Garlic crushed 2 tbsp
Baby onions 6
Coriander ½ bunch
Salt 1 tsp
METHOD
Add above curry powder into a processor with all the remaining ingredients and make a paste.
Other Ingredients
Chicken boneless ½ kg cut in thick julienne
Chopped onion ½ cup
Chopped garlic 2 tbsp
Red bell pepper 1 julienne
Above curry paste 1 tbsp
Peanut butter 1 tbsp
Salt ½ tsp
Nutmeg powder pinch
Brown sugar 1 tbsp
Coconut milk 1 can
Fresh basil leaves few
Kafil leaves 6-8
Oil ¼ cup
French beans boiled ½ cup
METHOD
Heat oil, fry onion till transparent, add garlic and chicken, cook, remove chicken, add 2 tbsp more oil, cook curry paste until oil separates, add cooked chicken with red bell pepper, peanut butter, sugar, nutmeg and kafil leaves, add coconut milk, cook till thick, add fresh basil leaves, serve with jasmine rice.
