WHITE CHICKEN LOLLYPOPS
Ingredients
Chicken lollipop 1 kg
Green chili pastes 2 tbsp
Salt ½ tsp
Black pepper powder ½ tsp
White chicken masala 1 tbsp
Ginger garlic paste 1 tbsp
Egg 1
Corn flour 2–3 tbsp
Flour 2 tbsp
Butter 3–4 tbsp
Capsicum 1 cut into cubes
Fresh cream ½ cup
Milk 3–4 tbsp
Cheese ½ cup
METHOD
Take a bowl, add chicken lollipop, salt, ginger garlic paste, green chili paste, black pepper powder, white chicken masala, marinate and keep aside for 4–5 hours. Then add egg, corn flour and maida, keep aside for ½ hour, then deep fry the lollipop.
METHOD FOR GRAVY
Heat a pan, add butter, add capsicum, fry for few min then add fresh cream, milk, cook for few mins, add crushed green chili, black pepper powder and cheese mix and cook till thick consistency, set your lollipops on serving tray, pour gravy on the top, garnish with coriander leaves.
BONELESS STUFF CHICKEN FILLET
Ingredients
Chicken slice 1 kg
Ginger garlic paste 1 tbsp
Red chili powder 1 tbsp
Salt 1 tsp
Tandoori masala 1 tbsp
Red food color 1 tsp
Dried fenugreek 1 tsp
Lemon juice 1 tsp
Spinach 1 cup
Mayonnaise 2–3 tbsp
Boiled chicken ½ cup
Garlic chopped 3 tbsp
Chicken stock 2 tbsp
Chili flakes 1 tbsp
Egg 1
Breadcrumbs 1 cup
Chopped garlic 1–2 tbsp
Coriander leaves 2 tbsp
Paprika 1 tsp
Fresh cream 1 cup
Mozzarella cheese ½ cup
White chicken masala 1 tsp
METHOD
Put chicken pcs in a bowl, marinate with ginger garlic paste, red chili powder, salt, tandoori masala, red food color, kasuri methi, and lemon juice, mix it well and marinate for 3–4 hours. Take a pan add water, spinach boil it for few min. Take a pan, add oil, garlic sauté for few mins then add boiled spinach, boiled chicken and stock, mayonnaise, chili flakes mix and cook till water dries, take chicken pcs, stuff spinach mixture in the center and roll it, then dip in egg and coat in breadcrumbs, then deep fry till golden on medium–low flame.
METHOD FOR SAUCE
Heat a pan, add chopped garlic, coriander leaves, paprika, fresh cream, mozzarella cheese, white chicken masala, mix it well. Set tikka pcs in a serving tray, pour sauce on the top.
