Description:
This recipe uses the method of first boiling (or parboiling) the drumstick vegetable (Moringa pods) in salt water to ensure they become tender, followed by cooking them in a spiced gravy.
Ingredients:
Drumsticks: 2–3 medium, tender, cut into 3-inch pieces
Boiling liquid: 1.5 cups water + ½ tsp salt + pinch of turmeric powder
Oil: 1.5 tbsp
Tempering: 1/2 tsp mustard seeds, 1/2 tsp cumin seeds, few curry leaves
Onion: 1 large, finely chopped
Garlic: 3-4 cloves, crushed or finely chopped
Spice Powders: 1/2 tsp Turmeric, 1 tsp Red Chili Powder (or to taste), 1 tsp Coriander Powder
Optional: 1 tbsp jaggery or sugar (if using tamarind)
Garnish: Fresh coriander leaves
Step-by-Step Instructions
Part 1: Pre-cooking (Boiling)
Prep: Wash the drumsticks and lightly scrape the skin if they are not very tender. Cut them into 3-4 inch pieces.
Boil: In a pan or pressure cooker, add the drumstick pieces, 1.5 cups of water, salt, and a pinch of turmeric powder.
Cook:
Pan: Cover and cook for about 8–10 minutes until they are soft but not mushy.
Pressure Cooker: Cook for 1 whistle, or in pan then immediately release the pressure to prevent overcooking.
Set Aside: Drain the drumsticks, but keep the liquid for the gravy.
Part 2: Making the Curry (Masala)
Temper: Heat oil in a pan. Add mustard seeds, cumin seeds, and curry leaves. Allow them to splutter.
Sauté: Add the chopped onion and garlic. Sauté until the onions turn light brown.
Add Tomatoes: Add the chopped tomatoes and a little salt. Cook until they become soft and mushy.
Add Spices: Add the red chili powder, turmeric powder, and coriander powder. Stir-fry for 1-2 minutes until the oil starts leaving the sides of the masala.
Simmer: Add the pre-boiled drumsticks to the masala. Pour in the retained cooking water to create a gravy consistency.
Final Cook: Cover and cook on low flame for 5 minutes so the drumsticks absorb the flavors.
Finish: If using jaggery/sugar for a tangy-sweet taste, add it now. Garnish with fresh coriander leaves.
Expert Tips
Select Tender Pods: Use fresh, thin, green drumsticks. Woody or very thick pods are tough and tasteless.
Don't Overcook: Do not boil the drumsticks until they are falling apart; they should retain their shape.
Flavor Boost: The curry tastes best when it rests for 30–60 minutes after cooking.
