Indulge in the rich and creamy flavors of Semiya Javvarisi Payasam, a traditional Indian dessert made with vermicelli, sago, and a special nutty powder. Perfect for festive occasions or as a sweet treat after meals.
Ingredients:
Main Ingredients:
Semiya (Vermicelli): 180 grams
Javvarisi (Sago): 100 grams
Sugar: 500 grams
Milk: 1.5 liters
Water: 2 liters
Special Powder:
Badam (Almonds): 10
Cashews: 10
Elaichi (Cardamom): 1 teaspoon
Sugar: 100 grams
For Garnishing:
Ghee: 2 teaspoons
Cashews & Raisins: as needed
Instructions:
Boil the Milk:
Pour 1.5 liters of milk into a large, heavy-bottomed pot.
Place the pot over medium heat.
Stir the milk occasionally to prevent it from sticking to the bottom.
Once the milk reaches a boil, remove 500 ml (2 cups) and set it aside for later use.
Keep the remaining 1 liter of milk simmering on low heat.
Cook Javvarisi (Sago):
In a pressure cooker, combine 100 grams of javvarisi and 250 ml (1 cup) of water.
Close the lid and cook for 3 whistles.
Once done, set it aside.
Cook Semiya:
Add 180 grams of roasted semiya to the simmering milk.
Cook on low flame, stirring occasionally to prevent sticking, until the semiya is 75% cooked and the mixture thickens.
Prepare Special Powder:
In a mixer jar, combine 10 almonds, 10 cashews, 1 teaspoon of elaichi, and 100 grams of sugar.
Grind into a fine powder. This should yield approximately 1 cup of powder.
Combine Ingredients:
Once the semiya is 75% cooked, add 2 liters of hot water to the pot.
Mix well and then add the 500 ml of boiled milk that was set aside earlier.
Add the cooked javvarisi to the mixture.
Stir in 400 grams of sugar and allow the mixture to cook until the sugar dissolves completely.
Add Special Powder:
Once the sugar has dissolved, add the prepared special powder to the pot.
Mix thoroughly to ensure even distribution.
Prepare Garnishing:
In a small pan, heat 2 teaspoons of ghee over medium heat.
Add cashews and raisins as desired, and fry until they turn golden brown.
Add the fried cashews and raisins to the payasam.
Final Touch:
Give the payasam a final stir to incorporate the garnishing.
