✨ Kerala Style Vegetable Stew – Healthy, tasty & toddler-friendly recipe made with coconut milk and vegetables. Perfect side dish for appam, idiyappam, chapathi or even plain rice. 🥗
In this video, I am sharing a no-spicy Kerala Vegetable Stew recipe specially for toddlers and kids. This stew is very simple, light, and easy to digest – best for lunch or dinner.
🌿 Ingredients:
Potato – 2 (one cut into half, one diced)
Carrot – 1 (chopped)
Beans – 7 to 8 (chopped)
Salt – as needed
Coconut oil – 1 tbsp
Mustard seeds – ½ tsp
Saunf (fennel seeds) – ½ tsp
Shallots – 6 to 7 (finely chopped)
Thick coconut milk – 1 cup
Crushed pepper – ½ tsp (optional for toddlers)
Curry leaves – few
🥣 Method:
1. In a pressure cooker, add potato, carrot, beans, salt, and water. Cook for 2 whistles.
2. Heat coconut oil in a pan. Add mustard seeds, saunf, and shallots. Fry until golden.
3. Add cooked vegetables and thick coconut milk. Mix well.
4. Add crushed pepper & curry leaves. Switch off flame.
5. Healthy & tasty Kerala Vegetable Stew is ready to serve toddlers & kids!
