Wagon Wheels, do you remember them? I loved a wagon wheel when I was a kid and still do, this slice version couldn't be easier, with only 4 ingredients and 15 mins you have a slice ready to chill. My no bowl slice is always a winner, and I love it because you can add whatever combo takes your fancy. It bakes in under 25 minutes, with less than 5 minutes hands on time, what's not to love?
The combinations that you can make are endless, my personal favourite is almonds, white chocolate, apricots, my mum loves raisins and dark chocolate with peanuts, as long as you keep your ratios on point you do whatever you suits you in your kitchen. Now I did the costing to the best of my ability with the ingredients I had at the time, Wagon Wheel slice came in at $5.75 and the Rocky Road came in at $6.70 and as easter splurges that isn't too bad. Besides they are rich and go a long way.

Wagon Wheel Slice
Preheat oven to 180c/350f
1 pack of rectangle or square plain biscuits, simpler is better
Marshmallows to cover the top, amount will vary depending on your choice
125 g roughly of some chocolate that will melt easily
2 T raspberry or strawberry jam
Line a 9 x13/ 23x 33cm tray with paper, place biscuits in bottom, spread over jam, evenly space marshmallows on top leaving only small gaps. Place the tray in the oven for 4 mins, we just want to melt the marshmallows so we can spread them over any gaps.
As soon as your timer goes off, spread the marshmallows with a pallet knife that has been oiled lightly to prevent sticking.
Place your chocolate pieces on the top, making sure you have enough to cover the entire top when it melts, leave for 3/4 minutes depending on how cool it is at yours, or pop back into the oven for 3 mins, watch it, it will scorch the chocolate if you forget, spread the chocolate with your offset spatula or back of a spoon and you my friend are done, Chill in the fridge to set chocolate. Keeps well over a week in the fridge.
No bowl Easter Rocky Road Slice
1 c peanuts nuts
1 c coconut desiccated
1 c Raspberry lollies
1 c marshmallows
1 can of condensed milk
1 cup of chocolate
1 c little coloured easter eggs (optional)
Preheat oven to 180c / 350f
Line a 9x13/23x33cm tin with paper, ideally you want a pan that is 2.5 cm/1" deep, bring the paper up the side a little so the condensed milk doesn't get caught underneath.
Sprinkle ingredients evenly over the base in the order that they are listed, cover with aluminium foil that has been greased a little, so it doesn't stick and bake for 16-18mins.
Remove the foil and bake a further 5-8 mins depending on your oven, watch it closely, it will catch quickly.
Don't cook until really brown or your slice will be too hard to chew once it is cold, so just a little colour, refer back to the vlog if unsure, cool before cutting and store in the fridge, this slice will keep for a good week and a half in the fridge and you are all done.
