Recipe
520g 2 1/4 c plain flour
1 egg
handful of chopped basil
1/2 c of olives chopped
6 g salt
7g yeast
1 t garlic granules
1 c grated tasty cheese
50 ml / 1/4 cup of oil
250ml - 300ml of tepid water
Cross paste
1/2 c basil pesto
plain flour to make thick paste
or you could puree fresh basil, salt, garlic, oil and some cheese to make the paste.
Mix all ingredients together to form a soft but not too sticky dough, knead by hand or in a stand mixer for 8-10 minutes, cover and rest in a warm place until doubled in size, this may take 1 hour or up to 2 1/2 hours depending on the temperature, day and flour. Enriched doughs tend to rise a little more slowly, so be patient.
Remove the dough from the bowl and form into a log shape, divide the dough into 10-12 equal pieces.
Roll each piece into a ball and add some tension to the dough ball a shown in the video.
Place the buns in a greased in a tray and cover again and let rest until the buns have doubled in size again, maybe 45min/ 1 hr 15 mins.
When the buns are almost risen, preheat your oven to 180 no fan.
Mix small amount of flour with some pesto to make a thick paste that will hold its shape and pipe onto the buns.
Bake for 16 min- 19 minutes.
Buns will register at above 90 when cooked.
Leave in the pan to cool until warm before devouring one slathered with butter.
