Chicken Chow Mein [pronounce tʃaʊˈ- mee -an] Recipe
Serves 2-3 people
INGREDIENTS:

250g / 9 oz chicken breast
1/2 tsp bicarb soda (baking soda)
1/4 small white cabbage
1 carrot
3 spring onions (i.e., green onions, shallots)
2 large garlic cloves
250g / 9 oz fresh chow mein noodles
83g / 3 oz fresh mung bean sprouts
2 tbsp sunflower oil (or vegetable or peanut oil)
1/4 cup water
MARINADE:

2 tsp cornflour
1 tsp dark soy sauce (I use Lee Kum Kee)
1.5 tbsp light soy sauce (I use Ayam)
1.5 tbsp oyster sauce (I use Lee Kum Kee)
1.5 tbsp Chinese cooking wine (i.e., Shaoxing wine; I use Pandaroo)
2 tsp white sugar
1/2 tsp pure sesame oil (I use Yeo’s)
1/4 tsp ground white pepper

00:13 VELVET THE CHICKEN
Slice the chicken breast into 1 cm / 1/4" pieces. Place them in a bowl and sprinkle with bicarb soda. Mix well, cover, and refrigerate for 30 minutes. This process, called 'velveting', makes the chicken tender once cooked.
00:40 MAKE THE MARINADE
Meanwhile, add all the marinade ingredients to a cup. Mix thoroughly, ensuring no cornflour is stuck at the bottom.
01:49 MARINATE THE CHICKEN
Once the chicken has finished velveting, wash and rinse it well. Add 1 tbsp of your prepared marinade, mix, and set aside to marinate while you prepare the remaining ingredients.
02:26 PREPARE THE VEGETABLES AND AROMATICS
Shred the cabbage and coarsely grate the carrot. Trim the roots from the spring onions, then separate the stems (firm white parts) from the leaves (soft green parts). Finely slice the stems and cut the leaves into 2.5 cm / 1" pieces. Finely chop the garlic (avoid using a garlic press, as the garlic may burn more easily).
03:01 PREPARE THE CHOW MEIN NOODLES
Warm the noodles according to the package instructions. Mine required soaking in boiled water for 10 seconds. Strain and set aside.
03:18 STIR-FRY
Heat sunflower oil in a large pan or wok over high heat. Add the garlic and stir-fry for 10 seconds, then add the marinated chicken. Stir-fry for 1 minute.
Add the shredded cabbage, grated carrot, and finely sliced spring onion stems (white parts). Stir-fry until the cabbage wilts.
Add the warmed noodles, 1/4 cup water, and the remaining marinade. Stir-fry for 2 minutes, ensuring the noodles are evenly coated.
Add the spring onion leaves (green parts) and mung bean sprouts, then stir-fry for 1 minute.
Serve and enjoy. 🙂
