Our fishmonger sells salmon fillets that are MASSIVE... and we wouldn’t have it any other way! 😄 There’s nothing quite like a generous portion of salmon on your plate. We cook ours to medium doneness, giving each side just a few minutes for that gorgeous seared flavor. If you’d like to try our method, follow along and enjoy pan‑fried salmon with perfectly crispy skin.
Pan-fried Salmon with Crispy Skin Recipe
2 portions
INGREDIENTS:

1 large salmon fillet (600 g / 10.5 oz, approx. 8 cm / 3" thick and 7 cm / 2.8" wide)
salt
pepper
sunflower oil

00:13 Prepare The Fillets
If your salmon fillet is large like mine (e.g.: 7 cm / 2.8" wide), slice it in half with a sharp knife to make two portions. Otherwise you can skip this step.
00:29 Pat Dry
Make sure the fillets are completely dry, especially the skin. This step is key for that irresistible crunch. Paper towels work perfectly.

Sprinkle salt and pepper on both the skin side and the top side. Be generous with the thicker parts of the fillets, and go easy on the thinner parts so the flavor stays balanced.
01:29 Pan-fry
Heat a large stainless steel or cast iron pan over high heat. Add about 2 tbsp of sunflower oil or enough to coat the base fully. When you see a faint white smoke rising from the pan, you're ready to cook.
Place the salmon skin-side down and sear for 3 minutes without moving it.
Flip to one side and sear for 2 minutes.
Turn to the opposite side and sear another 2 minutes.
Finally, flip top-side down and sear for 3 minutes. Remove from the pan and serve.
