This Eggless cake is inspierd from Iyenger bakery in Bangelor. It is soft, fluffy and moistest cake i have ever had. This Vanilla tea cake is one of the easiest cake to bake. Loved by both kids and adults.

Eggless Soft and Fluffy Tea Cake Recipe
Ingredients -
90 gm Curd | दही
75 gm Castor Sugar | पिसी हुई चीनी
60 ml or 1/4 Cup Neutral Oil | तेल
1/8 Tsp Vanilla Essence | वेनीला सत्र
60 ml 1/4 Cup Milk | दूध
90 gm Maida | मैदा
1/2 Tsp Baking Powder | बेकिंग पाउडर
1/8 Tsp Baking Soda | मीठा सोडा
1 Pinch Salt | नमक
Method
• Preheat your oven to 175 °C with both rods on.
• In a bowl, add curd and caster sugar.
• Whisk until the sugar dissolves completely.
• Add milk, oil, and vanilla essence.
• Whisk again until smooth and well combined. You can use an electric whisk or a hand whisk.
• Set the wet mixture aside.
• Take a 4–6 inch mould and line it with parchment paper, or grease it with oil and lightly dust with flour.
• In another bowl, add refined flour.
• Mix in baking powder, baking soda, and a pinch of salt. These are your dry ingredients.
• Add the dry mixture to the wet mixture.
• Gently fold using a spatula.
• Use the cut-and-fold method, and do not overmix.
• Mix just until smooth and no dry flour is visible.
• Pour the batter into the prepared mould.
• Tap the mould 2–3 times to release air bubbles.
• Bake in the preheated oven for 40–45 minutes on the middle rack.
• Once baked, carefully remove the cake from the oven.
• Let it cool for 5 minutes, then take it out of the mould.
• Place the cake on a wire rack, remove the parchment paper, and let it cool completely.
• When cooled, your soft and spongy bakery-style eggless tea cake is ready.
• Slice and enjoy! (I couldn’t wait, so I cut mine while it was still warm—it tastes great this way too.)
