Khatta Meetha Namkeen Recipe
Ingredient-
2 Tbsp + 1 Tsp + 1 Tsp Oil | तेल
12-15 No. Almond | बादाम
12-15 No. Cashew | काजू
2 No. Dry Red Chilli | सूखी लाल मिर्च
1/2 Cup Raw Peanuts | मूंगफली
1/4 Cup Dry Coconut | सूखा नारियल
1.5 Tbsp Raisins | किशमिश
2 Cup Puffed Rice | मुरमुरा/लैया
Oil For Frying | तलने के लिए तेल
1 Cup Thick Flatten Rice | मोटा पोहा
1 TSP Turmeric Powder | हल्दी
1/8 Tsp Citric Acid | साइट्रिक एसिड/निम्बू फूल
1/4 Tsp Fennel Seeds | सौंफ
1/2 Tbsp Coriander Seeds | धनिये के बीज
1 Tsp Salt (As Per Taste) | नमक स्वादानुसार
1 Tsp Black Salt | काला नमक
1 TSP Red Chilli Powder | लाल मिर्च पाउडर
1.5 Tbsp Caster Sugar | चीनी का भूरा
15-20 Dry Curry Leaves | सूखी करी पत्ता
1/2 Cup Thick Sev | मोटी सेव
Method-
Heat a kadhai and add two tablespoons of oil
When the oil is moderately hot, add half sliced almonds
Also add half sliced cashew nuts and let them fry on a low heat until it starts to change its colour
Strain them out quickly and keep them aside, we don't need to brown them completely
In the same oil fry some dry red chillis and strain them out as well
Now in the same remaining oil, add raw peanuts and let it cook on medium to low heat while stirring
Peanuts will take 2-3 minutes to cook, it will also slightly change its colour
When done, strain them out carefully, and keep it aside to cool down
In the remaining oil add sliced dry coconut and fry it as well on a low heat
Strain them out when it starts to brown and keep them aside as well
Fry some raisins as well in the same oil, you can switch off the heat and fry the raisins in the residual heat as the oil will still be hot and raisins burn very quickly and get bitter
Strain them out quickly and keep them aside with all other things
Now remove the excess oil or take a fresh kadhai and add 1 Tsp of oil in it
When the oil is hot, add puffed rice and roast it while stirring on a medium to low heat
Keep stirring occasionally, until crisp
This will take around 6-7 minutes on a low heat
To check when it's done, take one piece and press it between your fingers, it should be crispy and crumble
When done, transfer it into a bowl or a plate and keep it aside
Now heat some oil for frying
Take a sieve and add some flattened rice into it and fry them as shown
Using a sieve is important as it puffs up very quickly in the hot oil and has to be strained out quickly
If you will not use a sieve it will splatter all around and will burn till you strain them out completely
When crisp, strain them out on a kitchen towel to drape off any excess oil and keep it aside
Now heat a kadhai with 1 Tsp of oil, you can use the same oil by taking the excess oil out
When the oil is hot, add a teaspoon of turmeric powder and cook for 30 seconds till the raw smell of turmeric goes off
Now add all the prepared flattened rice and puffed rice into the kadhai
Mix everything well until everything is nicely coated with turmeric as shown
Now switch off the heat and let it cool down completely
Now to prepare the masala, take a mortar pestle and add citric acid and crush it completely into a fine powder
Now add fennel seeds and coriander seeds and crush them lightly
Add salt to taste, black salt, red chilli powder and caster sugar
Mix everything well, our spice mix is ready
Note- IN THIS RECIPE WE NEED TO USE CASTER SUGAR ONLY WHICH IS ASLO KNOWN AS CHEENI KA BHURA
Now take the prepared flattened rice and puffed rice mixture
Add some crushed dried curry leaves, fried red chilli torn into half, peanuts, all the prepared dry fruits and coconut slice
Also add any thick Sev of your choice and two tablespoons of prepared masala/spice mixture
Now mix everything well together so that everything gets well coated with the masala as shown
Your delicious Khatta Meetha Namkeen is ready
Serve with tea
You can store it in an air tight container in a dry place for upto 15-20 days
