George’s parents were very good dinner party hosts in ht eighties and a standard starter was Swiss Eggs. In today’s episode George shows you how to knock them up in a microwave in seconds. A very comforting dish in so many ways.
INGREDIENTS:
Butter
Cheese, a few slices (Gruyere ideally but any nice full-flavoured firm melting cheese will do)
Double cream (a dash)
Crispy fried onions or shallots (the ones that come in a tub)
Pepper and Salt
METHOD:
Butter the inside of a teacup and then line halfway up with thin slices of cheese. Crack an egg in trying as best you can to move the yolk into the middle. Pour in a dash of cream, add a big pinch of onions, pepper and a little salt (though it might not need it if the cheese is especially salty). Place a saucer or a bit of folded kitchen paper on top of the cup and microwave for about 40 seconds until just cooked with a runny yolk. IT WILL DEPEND ON YOUR MICROWAVE AND YOU MAY NEED TO EXPERIMENT TO GET IT RIGHT. Enjoy with rounds of toast.
