I’m the Snack Hacker, demonstrating fast, easy, innovative ideas for tasty bites.
This is a really important recipe that I’ve been holding off from doing for a while because I wanted to get it right. When I first moved to Brighton about 25 years ago there was a burger van at the car boot sale who used a can-do Snack Hacker attitude to cater for the vegetarians of my newly adopted hippy town. This is what they made.
INGREDIENTS:
2 slices wholemeal bread (must be wholemeal) lightly toasted or fried
1 fried egg with a runny yolk (season it while it cooks)
2 slices processed cheese
1 whole onion fried until brown and wet and sticky
Mayonnaise and Dijon Mustard
METHOD:
Assemble thus - bread, onions, cheese, egg, mayo and mustard and the other bread.
