Ingredients:
3 large potatoes (cubed)
3 large carrots (sliced)
2 cups green peas
½ bunch fresh methi leaves (washed & chopped)
3 glass water
1 tsp turmeric powder
½ cup oil
1 cup onion (sliced)
1 teaspoon ginger paste
1 teaspoon garlic paste
½ teaspoon turmeric powder
2 tablespoon red chili powder (adjust to taste)
Salt to taste / 1 teaspoon
¼ cup water
2 tablespoon fresh green chilies
3 tablespoon fresh coriander
1 lemon cut into small pieces
½ cup water
Method:
Heat oil in a pan and add sliced onions and sauté until golden.
Now add ginger-garlic paste and cook for a minute until fragrant.
Add turmeric, red chili powder,water, and salt.Mix well on low flame so the spices don’t burn.
Next, add peas and carrots.Mix everything nicely so the vegetables are well coated with spices.
Cover and cook for 5 minutes on medium flame, stirring occasionally.
Now add potatoes, fresh coriander, lemon and chopped methi leaves.Mix gently and cover again.
Cook for another 7–10 minutes until all vegetables are tender and methi aroma comes out beautifully.
Turn off the flame.
Garnish with fresh coriander.
Your Aloo Matar Methi Gajar is ready!Serve it hot with chapati, paratha, or dal chawal.It’s healthy, comforting, and perfect for winter meals.
