Chingudi Bhaja is a quintessential Odia seafood delicacy. It is a simple yet flavorful dish where prawns are marinated in basic spices and stir-fried until golden and slightly crisp. In Odisha, it is the ultimate companion to Pakhala Bhata (fermented rice) or hot steamed rice with dal.
Simple Odia Chingudi Bhaja (Quick Stir-Fry)
This version focuses on the natural sweetness of the prawns and the pungency of mustard oil.
Ingredients: 250g prawns (cleaned), 1 large onion (sliced), 2 green chilies, 1/2 Tomato, mustard oil, turmeric, and salt.
Preparation:
Marinate: Toss the cleaned prawns with salt and turmeric. Let them sit for 10 minutes.
Sauté Aromatics: Heat mustard oil in a pan until it smokes slightly. Add Cut tomato and sliced onions. Fry until the onions are golden brown.
Fry: Add the prawns and slit corianderleaves. Stir-fry on medium-high heat for 5–7 minutes.
Finish: Cook until the prawns turn opaque and have a slight golden crust. Do not overcook, or they will become rubbery!
Key Tips for Authenticity :
Mustard Oil: Using mustard oil is non-negotiable for that authentic Odia "kick."
• Texture: The goal is a "dry fry" (Bhaja), not a curry. The onions should be caramelized and clinging to the prawns.
