Kanika is a traditional Odia sweetened rice dish, often served as part of the Chapan Bhog (56 offerings) at the Jagannath Temple in Puri. It is a fragrant, yellow-hued pilaf that strikes a perfect balance between the sweetness of sugar/jaggery and the warmth of aromatic spices.
Historically, before Biryani or Fried Rice became popular in Odisha, Kanika was the go-to dish for weddings and special occasions.

Aroma: Dominated by ghee, cardamom, and cinnamon.
Taste: Sweet, buttery, and slightly earthy from the bay leaves.
Texture: Each grain of rice should be separate and fluffy (not mushy), studded with crunchy cashews and chewy raisins.
