Pumpkin Seed Bundt Cake Recipe
Ingredients:
butter and flour for greasing the bundt pan
4 egg yolks
100g sugar
6 tbsp pumpkin seed oil
a pinch of salt
125ml water
150g pastry flour
2 tsp baking powder
5 tbsp coarse pumpkin seeds
2 tbsp pumpkin seeds
4 egg whites
Instructions:
1. Preheat oven (175°C)
2. Grease the bundt pan with butter and sprinkle a bit of flour
3. Separate the egg whites from the yolk. Beat the yolks and sugar until fluffy
4. Add pumpkin seed oil, a pinch of salt, and water. Continue beating
5. Add half of the flour, baking powder, and pumpkin seeds. Fold into the egg yolk mixture
6. In a separate bowl, beat the egg whites until stiff. Fold into the batter
7. Pour batter into the bundt pan and smooth the top. Gently tap the pan on the table to let it settle and remove the air bubbles
8. Bake for 50-60 minutes
9. Remove cake from oven. Let it cool, then transfer it to a round serving dish
10. Dust with powdered sugar or serve with your favorite frosting and enjoy!
