Apple Cake
Ingredients:
For the topping:
100g unsalted butter
100g dark brown sugar
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
400g apple jam
For the cake batter:
190g all-purpose flour
1 1/2 tsp baking powder
a pinch of salt
1/2 tsp ground cinnamon
120g of room-temperature unsalted butter
50g dark brown sugar
100g light brown sugar
2 eggs
1 tsp vanilla extract
90ml milk
Instructions:
1. Preheat oven (175°C).
2. Prepare the topping: In a small saucepan, combine butter and brown sugar over medium heat. Whisk until melted and the mixture thickens. Remove from heat and whisk in the cinnamon and vanilla extract. Pour into an ungreased pie dish or round cake pan. I use a 7.5 x 2.5-inch cake pan. Recommended is at least 1.8 inches deep of the pan. Add the apple jam evenly on top. Place the pan in the refrigerator as you prepare the cake batter.
3. Prepare the cake batter: Whisk the flour, baking g powder, cinnamon, and salt together. Set aside.
4. Whisk the butter until smooth and creamy. Add both sugars and beat on high speed until creamed together. Pour the eggs and vanilla extract and beat until combined. Pour the dry ingredients into the wet ingredients. Turn the mixer onto low speed and slowly pour in the milk as the mixer runs. Beat at low speed until all of the ingredients are combined. Be careful not to over-mix. It would help if you whisked it all by hand to ensure no lumps at the bottom of the bowl.
5. Remove the topping from the refrigerator. Pour and spread the cake batter evenly over the topping. Cover the cake pan with foil on top to prevent the top from over-browning
6. Bake for 1 hour and 20 minutes. The cake is cooked when a toothpick inserted into the center of the cake comes out clean.
7. Remove the cake from the oven and let it cool down for 10 minutes.
8. Upside-side down position, transfer the cake to the cake serving dish and enjoy it with coffee or tea.
