Winter is deep and quiet here in Finland ❄️
In this cozy slow-living vlog, I share a day filled with simple flavors, warmth, and family moments.
I start the morning by making a comforting saffron rice porridge for breakfast. Later, I bake an easy yogurt cake and enjoy it with hot chocolate together with my husband, a small pause to slow down and enjoy winter.
In the kitchen, I make pickled fresh beetroot, then prepare a simple, cozy dinner: creamy mushroom pasta with a fresh carrot salad.
The next day, my husband, our dog Hilma 🐾, and I take a peaceful winter trip to a small island for coffee, enjoying snowy scenery, fresh air, and the calm beauty of Finnish nature.

🍰 Easy Yogurt Cake 🍰
🧺 Ingredients 📌
2 eggs
150 g sugar
120 ml neutral oil
200 g plain yogurt or greek yogurt
250 g all-purpose flour
2 tsp baking powder
1 tsp vanilla sugar or vanilla extract
3 tbsp milk
1 tsp lemon zest

👩‍🍳 Instructions 📌
1. Preheat the oven to 170°C.
2. Line an 8-inch round cake pan with parchment.
3. Whisk eggs and sugar until light.
4. Add oil and yogurt. Mix gently.
5. Add flour, baking powder, and vanilla.
6. Mix just until smooth.
7. Pour into a lined pan.
8. Bake for 40 minutes.
9. Let the cake cool down, transfer to a serving dish, and dust with a little cinnamon.
