A comforting pasta dish that fits perfectly into a healthy lifestyle. These high-protein cannelloni are light, creamy and incredibly satisfying. Instead of heavy béchamel, the sauce is made with Greek yogurt and tomato, creating a rich texture with far fewer calories and more protein.
Another simple trick: the cannelloni are made using fresh lasagna sheets, which makes the recipe easier and faster.
Perfect if you love pasta but still want to keep your meals balanced, high-protein and lighter.
Ingredients:
fresh lasagna sheets
1 tomato
1 leek
ground turkey
high-protein ricotta
tomato sauce
Greek yogurt
Parmesan (or any cheese you like)
coconut oil (or other oil)
Spices
salt
black pepper
nutmeg
smoked paprika
Instructions
Dice the tomato and slice the leek into thin strips.
Heat a little coconut oil in a pan.
Sauté the leek until golden.
Add the ground turkey and break it into small pieces while cooking.
Add salt, pepper and the diced tomato.
Stir well, cover and let it simmer for a few minutes.
In a bowl combine:
high-protein ricotta
the turkey, leek and tomato mixture
Season with salt, black pepper, nutmeg and smoked paprika.
Mix well until smooth.
Drizzle a little oil over a baking dish and spread it evenly.
Take fresh lasagna sheets.
Spread the filling on one half.
Roll to form cannelloni.
Place the cannelloni in the baking dish.
In a bowl combine tomato sauce and Greek yogurt.
Add a little water to thin the sauce.
Season with salt, pepper and nutmeg.
Pour the sauce over the cannelloni, almost covering them.
Top with Parmesan or any cheese you like.
Bake at 180°C (350°F) for about 40 minutes.
