Ingredients (6 empanadas):
400 g lean ground turkey breast
1 small onion (white, red, yellow, or green onion)
Fresh herbs (dill, parsley, or cilantro)
1 small sweet pepper (red, yellow, or green)
Salt and pepper
Optional: chili or jalapeño
1 egg (for brushing)
6 small rice paper sheets
Instructions:
Finely chop the herbs, onion, and sweet pepper.
In a bowl, combine lean ground turkey with the vegetables, herbs, salt, and pepper. Mix well until slightly sticky.
Pour water into a bowl and dip each rice paper sheet briefly (about 10 seconds). Lay it flat on a surface.
Place the filling on one side. Fold over and transfer to a baking tray. Once the rice paper softens, crimp the edges like traditional empanadas.
Brush with beaten egg for a golden finish.
Oven: Bake at 200°C (400°F) for 10 minutes.
Air fryer: Cook at 200°C (400°F) for 8 minutes.
