Macedonians love peppers. No...we REALLY love peppers. And here is yet another way to preserve peppers with more of a fresh taste to consume over the winter months. If you do not want to jar them, eat them warm right out of the pan with crusty bread and cheese. You can also toss some in salads, put out with other meze, or even add it to soups, stews and casseroles. Either way, you will love this simple, traditional and rustic recipe!

YOU NEED (To make 2 Mason Jars as seen in the video):
12 Red Shepherd Peppers, diced in 1" pieces
12 Yellow/Light Green Shepherd Peppers, diced in 1" pieces
3-4 Hoy Peppers, deseeded and thinly sliced
1 entire head of Garlic, minced
2 Tbsp. Vegetable oil for frying
TO JAR:
Place in each jar 1 Tbsp. of your favorite Vinegar, 1 Tsp. Kosher or Pickling Salt, hot Water, and top with Olive Oil.
Salt to taste
