52. Low Carb & Dukan Summer soup : Beetroot and Kefir

Welcome to my channel.
Today we make a delicious cold soup, perfect for those hot summer days.
The style is Lithuanian and it is super easy. This kind of soup has many variations and lots of other European countries adore it.
I harvested our own beetroot and I boiled it but you can use pickled beetroot from a jar or cooked beetroot from the shop if you don't have time.

For the recipe ... This makes either one really large portion (400ml)
or two small portions of 200ml perfect for a two or three course menu
Ingredients
2-3 very small beetroots ,125g, peeled and boiled or roasted or pickled
75g peeled cucumber ,very small cucumber
250ml Kefir 1.5% fat
2 tiny radishes
1 clove of garlic
fresh dill and spring onion ,optional - can add before you blend the soup
or just use as a garnish
boiled egg for garnish
black pepper (depending on how sharp the radishes are)
seasoning (I didn't add any salt)
Method (see video for detailed instructions)
Grate the beetroot, chop the cucumber, radish and garlic.
Blend all the ingredients together - just pulse it 2 or 3 times or longer if you prefer a smoother texture. For chunky texture, do not blend it - you could just grate the cucumber if you want.

The original recipe suggests boiled new potatoes with butter, garlic and dill. This is not permitted on the Dukan Diet for Phases 1 and 2 BUT you can have a small amount on Phase 3 and 4 if it is on a celebration meal. If you are on the Dukan Staircase method you can have a bit of potato on a Sunday.
