49. Dukan Rhubarb Cake / Muffins with cinnamon and blueberries

Welcome to my channel !!!!
It is the start of Rhubarb season and I'm super excited. We grow it in our back garden in Bulgaria and we make all sorts of things with it. The video starts off with me picking Rhubarb in the garden.
Today we are making a delicious Dukan friendly cake which is low in fat, high in fibre and without sugar. We add a little bit of sweetener to the Rhubarb and then we use the oat bran and wheat bran as a base. We use baking powder and eggs for a raising agent but you can use bicarbonate of soda instead if you prefer. There is no milk products in this recipe, however you can serve it with quark or Skyr or yoghurt if you want.
The cake is quite dense but it is lovely and moist. Once baked keep it in an airtight container for 3 to 4 days in a cool place or fridge. You can toast it lightly and even freeze it if you want.
In the video we use 250g raw Rhubarb which became a heaped half a cup or just about 150ml but you can add a bit more Rhubarb. I suggest cooking 375g Rhubarb with 375ml water to give you a three quarter cup of compote or puree. If you are a bit short on Rhubarb then add a little yoghurt.

Ingredients used
250g to 375g fresh rhubarb in cubes
250 to 375ml water (to boil Rhubarb in)
half teaspoon or 2.5ml sweetener - add more if necessary
2 large or 3 medium eggs
10g baking powder (one sachet) or 3 tea spoons
20g wheat bran
150g oat bran
2 tea spoon ground cinnamon (optional)
handful of fresh blueberries
Baking for 20 minutes at 180 degrees Celsius
Recipe makes 8 small cakes / muffins but you can make a small loaf instead.
