I just finished a business trip in Nagoya and headed back to Tokyo on the Shinkansen.
Before boarding, I picked up a traditional ekiben — saba bo-zushi, an old-style pressed mackerel sushi that actually predates modern nigiri sushi.
This type of sushi was created before refrigeration.
The rice is strongly vinegared, tightly pressed, and topped with cured raw mackerel covered in kombu seaweed.
It’s firm.
It’s subtle.
Maybe not foreigner-friendly?
On the train, I also talk about Japanese sweets — including Nagoya’s famous shrimp cracker “Yukari” and soft, chewy “Uiro.”
Interestingly, when I gave Yukari to my American colleagues… it was the least popular gift.
