Vegan Mexican Style Stuffed Peppers

A yummy quick and easy recipe for a Mexican style stuffed pepper.
Ingredients
2 sweet peppers
1 cup cooked brown rice (can substitute any rice or quinoa)
1/2 cup black beans
1/2 cup corn
1/3 cup onions, chopped
1 can diced tomatoes
1 tsp cumin
1 tsp chipotle chili powder
salt and pepper to taste
1 cup water
Cut peppers in half long ways and clean out.
Mix all other ingredients together in a bowl. Spoon into peppers until full. Save extra to pour over top.
Pour water in bottom of instant pot. Place peppers in pot and pour remaining mixture over top.
Place lid on instant pot and set on manual high pressure for 5 minutes. After time is up, let set for an additional 5 minutes and then release pressure.
Serve with favorite toppings. I used shredded vegan cheese, vegan sour cream, and crunchy onions.
