Vegan chicken enchiladas recipe
Ingredients
2 Tbsp oil (I used avocado oil)
1/2 bag Butler Soy Curls
Chik-Style seasoning
1 small onion (diced)
1 tsp minced garlic
1 can diced green chiles
1 can black beans (drained and rinsed)
flour tortilla shells
vegan shredded cheese
Enchilada Sauce Ingredients
2 Tbsp oil (I used avocado oil)
2 Tbsp all purpose flour
1/4 cup chili powder
1 tsp garlic powder
1/2 tsp salt
1/4 tsp cumin
2 cups chicken broth
Preheat oven to 350 degrees.
Soak soy curls for at least 10 minuets to rehydrate.
To make enchilada sauce, heat sauce pan. Add in oil and whisk in flour. Let cook for 1 minute then add in remaining seasonings. Slowly whisk in chicken broth. Simmer for 10-15 minutes. Sauce will thicken as it cooks. Remove from heat and set aside.
Heat pan and drizzle with oil. Add in drained soy curls. Sprinkle on chik-style seasoning to lightly coat soy curls. Cook until most of the moisture is cooked out. Add in a little bit more oil and add in onions. Continue to cook for another 3-4 minutes. Soy curls will start to brown. Next add in garlic and green chiles. Mix and add in black beans. Cook until warmed thru.
Lay out tortilla and sprinkle on shredded cheese then add in filling and some enchilada sauce. Roll up and place in a baking pan. Once all are rolled and place in pan, pour remaining sauce over enchiladas and sprinkle on cheese. Place in oven and bake at 350 degrees for approximately 20 minutes.
Serve with favorite toppings and sides.
