3 eggs (separated)
1/2 tsp salt
1 tbsp sugar
80 ml melted butter
1 tsp lemon zest
250 g all-purpose flour
10 g baking powder
For the Strawberry Filling:
150 g canned strawberries (or fresh)
1 tbsp cornstarch
Reserved strawberry juice
For the Yogurt Soufflé:
180 g cottage cheese
100 g yogurt or sour cream
2 tsp flour
Egg whites from 3 eggs
A pinch of salt
150 g powdered sugar
1 tsp lemon juice
👩🍳 Step-by-Step Recipe
1️⃣ Separate the eggs. Mix the yolks with salt and sugar until dissolved.
2️⃣ Add melted butter and lemon zest. Mix well.
3️⃣ Sift in flour and baking powder. Knead into a soft shortcrust dough.
4️⃣ Press the dough into a 20 × 30 cm baking dish and form edges.
5️⃣ Spread strawberries over the base.
6️⃣ Mix the reserved juice with cornstarch and cook until thick. Pour over berries.
7️⃣ Mix cottage cheese with yogurt and flour until smooth.
8️⃣ Beat egg whites with salt. Gradually add powdered sugar and lemon juice until stiff peaks form.
9️⃣ Gently fold egg whites into the cottage cheese mixture.
