French Bread
yields 1 round loaf or 2 baguettes
Into a container, add 1 cup warm water (110 degrees), 1/2 Tbsp instant yeast and 1/2 Tbsp sugar. Stir to combine and set aside to bloom, about 3 mins.
Into a large bowl, add 2 1/4 cups AP flour and 1/2 tsp kosher salt. Stir.
Add yeast water and stir until combined. Flour your surface and your hands, about 2 extra Tbsp of flour. Knead for 2-3 mins or until no longer sticky. (Dough will be tacky but should not be sticky. Add a tad more flour if necessary.) Return dough to bowl and cover. Allow to rest for 15 mins while you preheat your oven to 425 F.
If making the boule:
Into your cool oven, set a Dutch oven with the lid. Allow oven to preheat with it in there. After about 15 mins, transfer the dough to a silicone bread sling or parchment paper. Score the loaf with a serrated knife to allow for expansion during baking. Add the boule to the Dutch oven and cover. Bake at 425 for 20-25 mins. Remove lid and return to bake for an additional 5 mins or until dark brown. Transfer to a cooling rack and allow to cool for at least 30 mins before slicing. Should be fresh at room temp for up to 3 days.
If making the baguettes:
Divide dough into 2 equal portions. Flatten each one out into a rectangle and fold to shape into a log. Roll the log like a Play-Doh snake until it's about 10 inches long, making sure the middle is about the same thickness as the ends. Set onto parchment paper on a baking sheet. Score the surface of the baguette with diagonal slits. Cover and let rest for about 15 mins while you preheat oven to 425 F. Bake for 18 mins with 1 cup of hot water in a pan underneath to create steam. Allow to cool on a wire rack before slicing. I like to cut the baguette into 5-inch loaves and split lengthwise for sub sandwiches. Mmmm.
Creamy Lasagna Soup Meal in a Jar
3 servings
Into a quart jar:
4 broken lasagna pasta sheets
1/4 cup bechamel sauce powder
1/4 cup heavy cream powder
1/4 cup to 6 Tbsp tomato sauce mix
2/3 cup each: sausage crumbles & ground beef, pulsed in the blender
3 Tbsp chopped onions
1/2 Tbsp garlic
1/2 cup mirepoix
1/3 cup mushrooms
1/3 cup diced tomatoes
1/2 Tbsp chicken bouillon
1/2 tsp kosher salt & pepper & garlic powder
1/4 tsp red pepper flakes
1/2 cup mozzarella and 2 Tbsp parmesan, powdered in the blender

To Prepare:
To a large soup pot add 2 Tbsp olive oil and contents of jar. Add 6-7 cups water and bring to a boil over med high heat. Reduce heat and simmer on medium until pasta and veg are tender, about 20 mins. Stir occasionally so it doesn't stick. Taste test and adjust. Serve with French bread. Enjoy!
