Solyanka is hearty, satisfying, and perfect for cold weather or when you want a bold, traditional dish.
🛒 Ingredients (Serves 4–5)
For the broth:
Smoked chicken thighs — 2 pcs
Water — 2–2.5 L
Salt — to taste
For the filling:
Hunter sausages — 150 g, sliced
Smoked pork belly (or brisket) — 150 g, diced
Boiled smoked chicken (from broth) — chopped
Olives — 80 g, sliced
Pickled cucumbers — 2 pcs, chopped
Onion — 1 medium, diced
Potatoes — 2–3 medium, diced
Tomato paste — 2 tbsp
Seasoning (black pepper, bay leaf) — to taste
Lemon juice — 1–2 tbsp
For serving:
Lemon slices
Sour cream
👨🍳 Instructions
1. Place 2 smoked chicken thighs in salted water and bring to a boil. Simmer to make the broth.
2. While the broth cooks, prepare the filling.
3. Slice hunter sausages into small rings.
4. Dice the smoked pork belly.
5. Remove the cooked chicken thighs, chop the meat, and set aside.
6. Slice olives and pickled cucumbers.
7. Dice onion and potatoes.
Prepare the sauté base:
8. Fry the onion in a pan until soft.
9. Add sausages, pork belly, chopped chicken, pickles, and olives.
10. Add tomato paste and seasoning. Fry for a few more minutes.
Finish the soup:
11. Add diced potatoes to the broth and cook until slightly tender.
12. Add the sautéed mixture into the broth.
13. Add lemon juice and simmer for 5–10 minutes.
Serve hot with a slice of lemon and a spoonful of sour cream.
