🧾 INGREDIENTS
Dough:
All-purpose flour – 500 g
Salt – 1 tsp
Water – 250–270 ml
Filling:
Ground beef – 500 g
Onion – 1 large (about 150 g)
Fresh cilantro – 20 g
Green hot pepper – 1 small
Salt – 1 tsp
Black pepper – ½ tsp
Water or broth – 50 ml (for juiciness)
👩🍳 INSTRUCTIONS
Sift flour into a bowl and add salt.
Gradually add water and knead into firm, elastic dough.
Cover and refrigerate for 1 hour.
Prepare the filling: blend onion, green chili, and cilantro until smooth.
Add the mixture to ground beef.
Add salt, black pepper, chopped cilantro, and water or broth.
Mix well until juicy and smooth.
Roll the dough to about 1 cm thickness and cut into circles.
Roll each circle very thin.
Place filling in the center and pleat to seal khinkali.
Boil in salted water until they float and puff up.
Remove and enjoy hot and juicy khinkali!
