Today's video is part of my series "Dukan Canning with Carlien"
We are making a very versatile sauce. It can be used with pasta or as a pizza sauce before before putting all your toppings on. It's packed full of veggies and very healthy.
In the video I make 12 x 312ml jars and I freeze 3 x 500ml tubs but if you can everything you would get about 17 x 312ml jars. The jars are quite small, so ideal for about 2 portions or 3 at a squeeze. If you have a bigger family of 5 or more, you could make bigger jars if you want (just make sure the canning method you use is safe).
We use 12 teaspoons (60ml) of salt but remember that is for about 50 portions of sauce. So 1.2ml of salt per portion which is really not a lot if you compare it to store bought sauce. You could probably reduce the amount of salt just check the acidity of your tomatoes, you might have to add lemon juice to make sure the canning process is safe.
On this channel we focus on healthy recipes that are low in sodium (salt), low in fat, low in carbs, no added white sugar and made with organic (if possible) veggies. This is not a high protein recipe but there are plenty high protein recipes on this channel. I have followed this diet for more than 3 years now and it has helped me to lose some weight.
For the recipe METHOD I am asking you to watch the video. The INGREDIENTS appear on the screen during the video as well.
Recipe makes about 17 x 312ml jars
Ingredients
3.7kg tomatoes (remove the skins by blanching or roasting) you can also remove the pips if you want by putting the tomatoes through a mincer (I don't do this step but people say it makes it taste less bitter) then chop into one inch cubes (roughly, no need to be precise)
1.8kg aubergine (I leave the skin on and I don't do the salt treatment but you can if you want to) cut into cubes of about 1 cm or even 1 inch
2 large green bell peppers (de-seeded and finely chopped)
3 medium OR 2 large white onions (peeled and diced)
2 heaped table spoons crushed garlic
60ml OR 4 TBSP vegetable or olive oil
200g tomato or roast pepper paste / puree
one bunch fresh basil
one bunch fresh parsley
1 cup or 250ml red wine or veg stock
1 cup or 250ml mushroom or veg stock
2 TBSP Paprika, 2 TBSP Italian spices (no salt), 2 TBSP mixed dried green herbs like oregano / sage / marjoram / parsley / basil / winter savoury
Fresh or dried chilli (optional) I didn't add these
METHOD
1. Cook the sauce (see video) Then :
2. Sterilise the jars and lids
3. Pour boiling hot sauce into hot jars, seal immediately
4. Water bath according to you level above sea level OR use a pressure canner if you prefer.
OR
Leave sauce to cool a bit and divide into smaller freeze stable containers.
Once completely cooled off keep in fridge up to 3 days or freezer up to 12 months.
