INGREDIENTS:
Pack of ready made puff pastry
Pack of ready made shorcrust pastry
1 tsp Vegemite / Marmite
1 tbsp bbq sauce
180 ml ketchup
180 ml beef stock
1 tbsp cornflour
500 g beef mince
150 g bacon, chopped
1 onion, chopped Olive oil
1 tbsp Worcester sauce
1 egg, beaten
Serves 2
Prep = 15m
Cook = 45m
Total = 1h
Temp = 180° c - 360° f
STEP 1: FRY THE MINCE
Heat a frying pan and add some olive oil, then fry the chopped onion for a couple of minutes. Next add the mince and bacon and cook until browned.
STEP 2: MAKE THE SAUCE
Add the cornflour to the mince and mix it through. Next add the stock, bbq sauce, ketchup, Vegemite and Worcester sauce and give it a good mix, then cook it down for a few minutes until reduced.
STEP 3: ASSEMBLE THE PIE
Lay a layer of shortcrust pastry in the bottom of 2 greased pie tins and cut around the edge to neaten them up. Place a pie dish of the same size on the puff pastry and cut around it to make 2 circles. Add the mince to your two prepared pie dishes, then place the puff pastry lids on top and press down the edges. Paint the tops of the pies with beaten egg to give it a nice glaze.
STEP 4: BAKE THE PIE
Prick the pies with a fork, then bake for 25 minutes at 180 degrees Celsius until golden brown. serve with a good squirt of ketchup on top.
