This is the method my grandmother, my mother and now I use to make bread. If you want to eat bread your whole life, this is the best secret. Well it's not a secret anymore. The sourdough starter gives it an exceptional flavor. I hope you enjoy this recipe .
PRE- FERMENT:
50 g 100% whole wheat flour .
150 g all-purpose flour.
1 g of yeast.
1 cup of low -fat milk 1%
2 tbps cane sugar.
100 g sourdough.
I prepare this pre-ferment at 11 0'clock at night and I make the bread at 6 o'clock in the morning .
THE OTHER INGREDIENTS:
300 g all-purpose flour.
100 g of bread flour.
3/4 of cup cane sugar.
1 large egg.
40 g ghee butter
5 g of sea salt.
The zest of an large orange.
150 ml of low-fat milk 1%
Mold dimensions: 14 inches long, 10 inches wide , 2 1/2 inches tall .
