Hi, these breads are delicious.My grandmother used to make them the same way with piloncillo (unrefined cane sugar).This sugar makes them perfect. I hope you have success baking them.
PRE-FERMENT
100g of 100% wholemeal flour.
100g all-purpose flour.
2 tbsp plain yogurt.
3/4 cup low- fat milk 1%..
1g of yeast
1/4 of cup piloncillo sugar.
100g of sourdough starter.
OTHER INGREDIENTS.
220g all-purpose flour.
200g bread flour.
20g ghee butter.
2 tbsp sunflower oil.
1 cup piloncillo sugar.
1 huevo.
1/2 cup low-fat milk 1% 1 tbsp less.
sea salt 1/2 tsp.
750g sweet potato.
12 balls.of 108g.
SHINE INGREDIENTS.
1/2 cup of water.
1 tbsp cane sugar.
7 inches lid.
