Описание: This Trofie alla Boscaiola is made from pasta bianca. Pasta bianca is made without eggs, making it suitable for vegetarians and vegans alike. And if you omit the butter at the end, then so is the boscaiola sauce.
I have kept the sauce simple because "boscaiola" means woodsman or woodcutter - more accurately woodsman's wife - so the dish used to be made with whatever was found in the woods on their travels. There are hundreds of versions of this sauce with many not using tomatoes.

TROFIE BIANCA ALLA BOSCAIOLA
INGREDIENTS - METRIC
PASTA
100g Semolina
100g ‘00’ grade flour
Warm water as needed
SAUCE
30g Dried mushrooms
4TBSP Extra virgin olive oil
1 Clove garlic, finely chopped
1TBSP Finely chopped flat-leafed parsley
350g Fresh white mushrooms, diced approx. 1cm pieces
250g Tin of whole or chopped tomatoes, with juice
30g Butter
6TBSP Grated Parmigiano Reggiano cheese
Salt & pepper

INGREDIENTS - IMPERIAL
PASTA
4oz Farina
4oz ‘00’ grade flour
Warm water as needed
SAUCE
1oz Dried mushrooms
4TBSP Extra virgin olive oil
1 Clove garlic, finely chopped
1TBSP Finely chopped flat-leafed parsley
12oz Fresh white mushrooms, diced approx. 1cm pieces
8oz Tin of whole or chopped tomatoes, with juice
1oz Butter
6TBSP Grated Parmigiano Reggiano cheese
Salt & pepper

METHOD
Soak the dried mushrooms in a bowl with 250ml (8floz) of lukewarm water for 30-40 minutes.
Gather up the soaked mushrooms and squeeze them so the excess water goes back into the bowl.
Rinse them under running water then chop them fairly coarsely.
Filter the save soaking water through a coffee filter of a piece of kitchen tissue and set aside.
Pour the oil into a large sauté pan over medium heat and add the garlic.
Cook the garlic until it is just changing colour.
Stir in the parsley.
Add the soak mushrooms with the saved filtered water and cook until the water has evaporated.
Add the fresh mushrooms and cook until all of the water they release has evaporated.
Pour in the tomatoes and season with salt & pepper.
Cook until the tomato juice has reduced and separated from the oil.
Add the cooked pasta to the pan, along with the butter and grated cheese.
