How about bringing thit kho dish (caramelized pork belly) up another level. Here I paired it with the butternut squash puree and pickled golden beet. I love how the smooth buttery butternut squash puree goes so well with the thit kho. Then you have the acidity of the pickled golden beets to cut away all that rich and sweetness from the thit kho. Perfect combination!
INGREDIENTS FOR THE THIT KHO – CARAMELIZED PORK BELLY:

INGREDIENTS FOR THE PICKLED GOLDEN BEETS:
1 Tablespoon sugar
1 Teaspoon salt
3 Tablespoon white vinegar
1 ½ Cup hot water
1 Teaspoon whole black peppercorn
3 Whole peeled garlic cloves
1 Golden beet
INGREDIENTS FOR THE BUTTERNUT SQUASH PUREE:
1 Tablespoon butter, room temperature
1 Teaspoon black pepper
1 Teaspoon salt
2lbs Butternut squash
