Steamed halibut wrapped in spinach leaves, green peas, Manila clams and leek-saffron coulis. This dish is great for entertaining. The sauce can make a day ahead. The halibut wrapped in spinach can also make a day ahead. When you guests arrived all you have to do are cook the clams, peas and steam the fish. Easy peasy.
INGREDIENTS
LEEKS-SAFFRON COULIS
2 tablespoons unsalted butter
2 leeks, chopped (white and lightest green part only)
1 cup chicken stocks
2 pinches saffron threads
1 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon black pepper
HALIBUT
4 halibut fillets, trimmed to about 2 inch by 2 inch
salt and black pepper to season the fish
2 handful spinach leaves
MANILA CLAMS
1.5 pounds clams
1 tablespoon olive oil
1 tablespoon onion, chopped
2 garlic cloves, chopped
1/4 cup white wine
1 tablespoon unsalted butter
1/4 teaspoon black pepper
GREEN PEAS
1 cup frozen peas
1 tablespoon unsalted butter
salt and pepper to season the peas
FRIED LEEKS
1 leek, shredded (white and lightest green part only)
oil to fry the leeks
BEFORE SERVING:
1 teaspoon ground soy lecithin
edible flowers
1 tablespoon clarified butter
