This Molly sponge cake is my go-to base for tall layer cakes.
Soft, moist, and sturdy enough to stack without collapsing, it creates clean, even layers that hold fillings beautifully. Made with whipped cream instead of butter, the crumb stays plush and tender while maintaining structure.
I lightly brush the layers with a simple vanilla syrup for added moisture and flavor.
Perfect for:
• Celebration cakes
• Semi-naked cakes
• Fruit or cream-filled layer cakes
• Tall stacked cakes

🥣 Molly Sponge Cake Ingredients
5 large eggs
1 cup + 2 tbsp (265 g) granulated sugar
2 cups (260 g) all-purpose flour
2 tsp (12 g) baking powder
1/2 tsp salt
1 1/4 cups (300 ml) cold heavy cream
Bake at 340°F / 170°C (no fan)
20–25 minutes in 3 × 8-inch (20 cm) pans
Until golden and set.
Toothpick should come out clean.

🍯 Vanilla Syrup
1/2 cup (120 ml) hot water
2 tbsp (25 g) sugar
2 tsp vanilla extract
Drizzle lightly over cooled layers, about 2-3 tbsp per layer.
