Gumbo Recipe:
-1/2 cup Oil
-1 cup flour
-4 quarts broth (or water)
-2 large onions
-4 garlic cloves
-1 bunch green onions
-1 bell pepper
-3 stalks celery
-1/4 cup parsley
-salt
-black pepper
-red pepper
-leftover turkey (or whole chicken cooked and pulled)
-1-3 lbs smoked sausage browned
Mix roux with oil and flour; cook over medium heat stirring constantly until roux is a dark caramel color; remove from fire and add remaining ingredients; boil for about 2 hours; serve over rice.
