Today I’m sharing some family-friendly, high-protein meals I made for my family of six this week! I always aim for balanced, healthy foods that my whole family will enjoy (and will keep me on track with my own health and fitness goals as a busy mom!)

Meals from Today’s Video:
Meal #1: Taco Cottage Pie
(Adapted from “The Essential Cottage Cookbook” *link below)
Ingredients:
1 tablespoon oil
2 cloves garlic, minced
1 onion or shallot, diced
1 bell pepper, diced
2 lbs lean ground beef
1½ cups salsa
1 package taco seasoning (or 2 tablespoons chili powder)
Grated Cheddar cheese (as much as desired)
3 large sweet potatoes, peeled and chopped into bite-sized cubes
For Serving:
Chopped fresh cilantro or parsley
Sliced green onions
Chopped tomatoes
Shredded lettuce
Sour cream/Greek Yogurt
Guacamole & extra salsa!
Instructions
Cook the Sweet Potatoes
Preheat oven or air fryer to 425°F (220°C).
Toss sweet potato cubes with a little oil, salt, and pepper, then bake or air fry for until golden and soft inside.
Brown the Meat & Cook the Veggies
While sweet potatoes are cooking, heat oil in a large ovenproof skillet over medium heat (12" cast iron works perfect).
Add ground beef, breaking it up with a wooden spoon. Cook until browned (about 8 minutes), then drain fat. Add veggies and cook until soft.
Stir in taco seasoning and salsa.
Spread the cooked sweet potatoes over the beef mixture. Sprinkle cheese & bake in the preheated oven at 425°F for 20 minutes, or until bubbly and cheese is melted.
Serve over chopped lettuce & garnish as desired with your favorite toppings!
Meal #2: Turkey & Zucchini Noodle Lasagna
Directions for Turkey & Zucchini Noodle Lasagna:
Step 1:
Slice 3–4 zucchini lengthwise into strips. Sprinkle with salt to draw out excess moisture. After about 15 minutes, pat dry with paper towels. Drizzle with oil and roast at 425°F for about 20 minutes, until lightly browned.
Step 2:
Prepare the red sauce and let it simmer for at least 15 minutes (or longer if you have time!).
Red Sauce Ingredients:
Splash of olive oil
1 lb lean ground turkey
2 Italian sausages, casings removed
1 yellow onion, finely chopped
3–4 garlic cloves, minced
1 (24oz) jar marinara sauce
2 tbsp tomato paste (add more if needed to thicken)
1 tsp Italian seasoning
½ tsp salt (adjust to taste)
¼ tsp black pepper
Step 3:
Bring a large pot of salted water to boil if you plan to use regular lasagna noodles as well.
Step 4:
Meanwhile, prepare the ricotta and cottage cheese mixture & blend until smooth:
1 cup 4% cottage cheese (blend first)
¾ cup ricotta cheese
½ cup grated parmesan cheese
¼ tsp salt & pepper
1 egg
¼ cup chopped parsley
Step 5:
Boil lasagna noodles according to package directions (if using). I did 4 layers, using 2 large noodles per layer (cook as many layers as you want!)
Step 6:
Assemble the lasagna by layering: sauce, noodles, ricotta mixture, zucchini, and mozzarella. Repeat.
Step 7:
Bake at 375°F for 45 minutes, covered with greased parchment paper and foil. Remove cover once it's bubbly in the middle. Then bake an additional 15–20 minutes uncovered until bubbly and lightly browned on top.
Meal #3: Quesadillas
Ingredients
2 small tortillas (I used keto wraps) or 1 large tortilla
¼ cup low-fat shredded cheese
3 slices of deli chicken or turkey meat, chopped
1 handful chopped spinach
3 baby tomatoes, chopped
A few slices of hot peppers
Sliced olives
For Serving:
½ cup cottage cheese (for extra protein)
Guacamole (optional)
