I tried many recipes for these famous mochi donuts, and after many trials, this recipe is the one that worked the best. It has the perfect balance of flavor and the classic chewy texture mochi has. It is easy to make without the hassle of rolling individual balls and placing them together. The size is perfect as well for a quick snack. Try it once and love it forever.
Make sure you use the right rice flour. I have used glutinous rice flour also known as sweet rice flour used to make mochi. The donuts are made without any wheat flour and are gluten-free. I have worked on perfecting this recipe, I hope you like it as much as we do. I have made six flavors which are my favorite, but the possibilities are endless.
Recipe Ingredients:
Glutinous rice flour - 1/4 cup
Milk - 1/4 cup
Glutinous rice flour - 2 and 1/4 cup
Baking powder - 1 tsp
Milk - 1 cup
Salt - 1/4 tsp
Sugar - 1/2 cup
Egg - 1 large
Butter - 1/4 cup
Oil for deep frying
For the Glaze:
Lemon Glaze
Icing sugar - 1/2 cup
Lemon juice - 1 to 2 tbsp
Lemon zest - of 1/2 lemon
Yellow food color - 1 drop
Chocolate, Rose Pistachio, Raspberry and Black Currant, and Matcha
Icing sugar - 2 cups
Milk - 2 to 3 tbsp
Cocoa Powder - 1 tsp
Dried Raspberry Powder - 1 tsp
Matcha Powder - 1/2 tsp
Rosewater - 1/2 tsp
Finely chopped Pistachio - 2 tbsps
Dried rose petals - a few
Dried Black Currant Powder - 1/2 to 1 tsp
Milk - 1/2 tsp in each glaze (or as needed)
