Ingredients (makes 1 loaf):
• ½ cup ground flaxseed (100 g)
• 1¼ cups egg whites (300 g)
• ¾ tsp salt (3.5 g)
• ¾ tsp baking powder (3.5 g)
• 1 tbsp psyllium husk (10 g)
• ¼ cup oat flour (30 g) — or rye flour
• 1 tsp olive oil (4.5 g)

How to Make It:
1️⃣ Grind flaxseeds into fine flour (or use pre-milled).
2️⃣ Whisk egg whites until light and foamy.
3️⃣ In a bowl, mix whipped egg whites with salt, baking powder, and psyllium husk. Stir gently.
4️⃣ Add flax flour gradually, then oat or rye flour. Mix until smooth. The dough should be thick and sticky.
5️⃣ Rest for 10 min so psyllium binds the dough. Add olive oil, mix again.
6️⃣ Line a baking pan with parchment. Transfer the dough, smooth the top, sprinkle with seeds if you like.
7️⃣ Bake at 350°F (180°C) for 30–40 min in a fully preheated oven.
