In this episode 8 (Namibia-part 2), we are in Sossusvlei, Nambia.
Chef Mize' (Traditional Portuguese Chef), fries up battered Oryx fillet steaks in the Namib desert. Included in this video is some epic drone footage of the Namibian landscape, as well as the famous Dead Vlei.
Full Recipe (for 2 people)
Ingredients:
Venison Fillet approximately 400-500grams (Beef fillet can be used as an alternative)
1 egg
150g of flour
salt & pepper to your taste
fresh parsley (20-30g), chopped finely
3-4 gloves of fresh garlic, minced
4 ripe tomatoes, diced
approximately 40g of Red sweet pepper (chopped finely)
1 Large onion finely chopped
white or brown vinegar (2-3 tbsp)
2 x slices of lemon
1 x cup of maize meal
2 x tbsp of salted butter
1 cup of sunflower oil for frying.
METHOD:
STEAKS:
Cut fillet into 200-250g steak portions (approximately 1cm thick)
Marinate steaks with salt, pepper, minced garlic, BBQ spice and a splash of vinegar. Cover with cling wrap and set aside for an hour (in a fridge)
PAP:
Boil 3 cups of water with a pinch of salt
Add one cup of maize meal
Stir, reduce heat to low.
Cover and simmer for 30-45 minutes
Add 2 tbsp of butter to soften and flavor pap.
TOMATO RELISH:
Fry 1 diced onion in some olive oil until soft.
Add 2 minced garlic cloves, fry for a minute on medium heat.
Add 3 diced ripe tomatoes
cover and cook on low heat for 30 minutes (stir every 5-7 minutes)
Add fresh chopped parsley
BATTER STEAKS:
Coat steak with flour on both sides. Shake off excess flour.
Coat steaks in a beaten egg with some finely chopped parsley. Coat both sides.
Heat some oil in a frying pan (medium heat)
Shallow fry steaks until golden brown on both sides. (Turn steaks when meat juices appear on the up-side).
Remove and drain excess oil on kitchen towel.
SERVE:
Plate Steak with a slice of lemon.
Add maize meal (Pap) on the side.
Top Pap with some of the Tomato Relish sauce.
